This is my Vegetable Soup Recipe Base.
We change it up each time we make it depending on what is in our fridge or who is eating the soup.
Directions:
Step 1: Wash all of your veggies to get the pestisides off.
Step 2: Melt Butter in a saucepan. Chop celery and onion and then add to the saucepan.
Step 3: Peel and chop carrots and put them in.
Step 4: Add salt and pepper to the sauce pan and let it simmer while you chop potatoes. Add mushrooms (optional)
Step 5: Once the carrots are soft, add in the chopped potatoes, 6 cups of water and 2 TBSP of chicken bouillion.
Step 6: Stir occassionally until potatoes are tender.
Step 7: Serve and enjoy!
